My great-grandparents owned a food vending kiosk at Coney Island amusement park in the teens/20s. This is one of the items they served. They called them "hobo egg sandwiches", but they used more of a flat bun type of bread. They also sold cornmeal battered and deep-fried hardboiled eggs, similar to a corn dog.

I’m so confused…so do you just leave it there until the whole thing cooks from one side?? Doesn’t one side get burnt…

So alot of people are saying that the backside is black but I have a solution so you take the bread cut out the circle and then is you not frying both sides of the egg you fry the top side first and then wait for the pan to heat up so as soon as you put the eggs on they are almost fried and then it most likely will not burn as bad. I hoped this helped

Whats even better is that u put a slice of cheese on it and on top the cut out part of the brea. Heat it untill the cheese melts. Enjoy!

I made this and trust me, it was amazing! I would recommend adding some green onion and some hot sauce if you like it spicy for even more taste. 10/10 would recommend

Why lose the middle though? You could just fry the egg along and put it on the whole toast slice. Same result?
