This is a perfect real Roman carbonara recipe. Just like the ones I used to eat in Rome. The rigatoni pasta is very important. I don't know why, but it really tastes different when you use rigatoni instead of spaghetti

Nice video, but the best carbonara I've had in Rome was always hot going on warm. This is going to be luke-warm at best. Any tips chef? I think hot water is the key to emulsifying the sauce and keeping it nice and warm
