1 whole egg + 1 egg yolk
Grated Parmigiano and Pecorino Romano
Freshly ground black pepper
Guanciale or Pancetta

Add the guanciale into a cold pan and render over low heat.

Cook pasta a min short of recommended cooking time before adding to the guanciale in the pan.

Make sure you heat the plate over low heat (60C) in the oven before plating it with the pasta..
