It's the Flesh of the Pumpkin just underneath the hard outside, which actually isn't that thick, and once you basically peel off that orangish brown part, you're left with that softer, more yellowish orange flesh which becomes the pie, and the seeds you take out for roasting, as Pumpkin seeds are also awesome
