RECIPE (3 servings, 1h prep time)
-1kg potatoes, peeled and cut into chunks
Boil them in salted water 5-7mins until forktender.
Preheat the oven to 220C/430F and preheat 1/3 cup (80ml) oil in a baking dish for 10mins.
Drain the potatoes and fluff them up by shaking them in a colander.
Add to the hot oil and coat them with it.
Bake for 45-55min turning every now and then.
Salt:
-2 Tsp salt
-1Tsp garlic powder
-1 Tsp dried thyme
-1/2 Tsp dried Rosemary
Grind it until it’s a fine powder.
Season your potatoes with as much or as little as you want.

Roasted potatoes are the best. If you rough them up a bit before putting them in the roaster, it's even better. Just put a lid on that pot after draining, and shake to roughen them up. You did an excellent job!!

If you REALLY want the potatoes to get fantastically crispy on the outside, add a teaspoon of baking soda to the boiling water. It will make the water basic (as in, a higher pH) and will relax the starch on the outside of the potatoes.

Most people ‘smash’ them around in the pot with the lid on, after par-boiling, as the damaged edges give even more surface areas to brown/crisp up. Try it 😄

also because they're so grispy I would spray lightly with an oil like avocado oil before seasoning so it can stick to them better.. but not too much otherwise it can get soggy. gonna make these tonight

In case you don't know, heat proof oil is any high temp oils. If you end up searching the term it will include olive oils (Scientifically they're high temp), but avoid using olive oils exclusively for recipes like this. Blending it with canola would work fine.
