Yes, these. Guys are the best butchers. They are big guys also very strong. When they cut the front quarter and carry it in to start working on the front quarter and lift hind quarter off the hook and carry it in to dtart on the hind quarter it amazes me how strong there hands are❤❤❤❤❤❤❤😊😊😊😊😊😊😊😊

Former meat head here. The average consumer needs to be informed of the difference in large end vs. small end. Most think opposite as it is accurate by today’s cutting standards. Anyone with taste buds knows the large end, towards the chuck which is smaller in diameter is superior. History lesson from the bearded butchers requested 🤜🏻🤛🏻

I wish I could buy a Rib Roast with the cap on, it used to be sold that way . Matter of fact, when customers asked me for a "large end rib roast ", they got it with the cap on . I don't know who the genius was that decided the cap should be peeled off and turned into cube steaks , but if that wasn't the worst decision in the meat universe, I dont know what is .
