I'm going to be real with you...I don't have my original script or any of my notes/resources/books/papers for this episode since I made it 5 years ago. I lost a lot of my scripts and work-in-progress writings the beginning of 2016 and this video was one of them. Very sorry I couldn't provide sources so you could explore more. Since I have a lot of time on my hands currently, I was going through old hard drives and organizing them. Lo and behold, I found this video! I don't remember exactly why I never finished the video and uploaded it but here it is. Hope you enjoy a very young Jake. A Jake who could still interact with other human beings. It was a simpler time 5 years ago.

Those tatami mats didn't cut as cleanly as they should have. I suspect the blade in question wasn't as sharp as it could have been.

The steel used in this video, (the ancient one that I’m not even going to try spelling), isn’t particularly good steel. It’s effectively just bloomers steel in a larger furnace. It has a lot of impurities, and a very imprecise carbon content. Europeans in the same time period had much better steel. Please go watch Shadiversity’s video on katana misconceptions (or his video on Japanese vs. European sword misconceptions.)

A couple of things:

Katanas arent anything special, they had a really hard time making them back in the day becouse that "volcanic steel" was of very low quality and had many impurities, althogh you could make an argument about the curvature and stiffness of the sword making cutting "easyer".
Which brings me to the second point, the cuts performed here were a bit awkward, very little slicing and too much pushing the blade through the "stuff". Check some good HEMA cutting competitions or just some good cutting tests, youll see people cutting tatamis without the thing moving an inch
And living bone is much easyer to cut than dry dead bone. Living bone is moist and bendy so you can slice through it with greater ease.

Another thing that is important is the blade width. A thin blade doesnt have to move as much material out of the way, but that in turn costs stability and weight, a heavy blade won't stop that easily, not to mention that armor makes the whole thing much harder.
