If you love Risotto, this recipe is for you! Our Chef gave it an Indian twist by replacing the Arboria Rice with Jeera Samba Rice ! Much easier & affordable

Ingredients :

Jeera Samba Rice (unwashed) - 1 Cup
Mushroom - 200 g
Salt - 1 tsp
Garlic - 5 cloves
Onion - 1 medium sized
Coriander leaves - For garnish
Green Onions - For garnish
Thyme - ¼ tsp
Rosemary - 1 pinch
Oregano - ¼ tsp
Water -1 litre
Milk - 200 ml
Butter - 75 grams
Processed cheese - 1 cube

Instructions:
1. In a pan melt the butter and add the herbs, garlic and onion, saute for 30 seconds.
2. Add sliced mushroom and salt, and saute until well browned( around 2 minutes)
3. Add the unwashed jeera rice and mix it well, pour the water and milk gradually and whisk vigorously
4. Once all the liquid is absorbed and a pongal like texture is attained, switch off the flame
5. Add the chopped coriander, green onions and processed cheese. Serve hot

I know there is a lot of room for experiment in Risotto but you cud have atleast used Veg stock instead of Which z very basic and v should not flood the water milk all at once which makes Risotto less creamer
