I tried this recipe! Super decedant. I've never had a traditional eggs Benedict so I can't speak to the authenticity, but it's definitely easy and worth making. The "yolk" recipe is definitely one that I'd utilized in other types of meals as well. It's great for toast dipping!

Use silken tofu for a more authentic mouthfeel, its much more similar to a poached egg white than the firm tofu youre using.

To clarify: am not vegan, just a stickler for accuracy.

I love the original, but that actually looks pretty good. Using a sauce to replicate the egg yolk is a nice touch.
