Salt, garlic powder, let sit in the fridge overnight sear each side for 3 minutes, check your internal temp. Cut the heat down then butter baste 1 minute each side until your internal is 115-125 for rare - medium rare, rest for 7-9 minutes cut with a sharp knife

Quick go to...Montréal steak...it's always consistent. But salt, pepper, garlic, and rosemary with butter is the way to go on cast iron

Favorite seasoning is spgp. Then you toss a shit ton of Montreal steak seasoning on it. Let it sit at room temp for a while. Then you do your reverse sear.

Salt, pepper, garlic powder, and cayenne is my go-to seasoning combo for choice steaks, just salt and pepper for anything above that though

I'd be interested to see you sous vide steaks.

I got into it a while ago and while it produces great results, it's a pain to get the sear on a sous vide steak. You get much better sear on an oven reverse sear because it also dries the meat out on the surface. Sous vide just stays wet and you have to dry it out with paper towels.

I could almost swear salt isn't recommended in sous vide either until you're just about to cook, but IDK.

Got a realy cheap sous vide machine from a neighbor. I just put steak in a ziplock with salt, pepper, herbs and spices, and after an hour sear in my cast iron.

Reverse-searing is probs my favorite method for thicc steaks, and sous vide has been great for big cheap cuts I wanna tenderize
