I just made this, and I'll give a tip for others who may see this: make sure your searing pan is really hot and if you want a rare steak, you better pull it out of the smoker at 115-120F internal.

My method is similar, except I use a kamado grill/smoker. When my steaks hit 110° internal, I take them off to rest for about 5 minutes, crank the kamado to about 700° and then sear each side for about 45 seconds. A few more minutes rest with some butter and serve. My preferred wood chunks are mesquite or hickory. Season wth just kosher salt. Don't use pepper as a seasoning. Pepper will burn and taste bitter. Add pepper after the process if you must.

Actually sawmills use invisible ink on the wood before it gets cut, the peices that are cut are turned into chips and then pellets

0:45 I use those pellets for cat litter. Those sawdust pellets are also used for horse bedding. I get them at Tractor Supply.
So Joe is saying these pellets are used in a Traeger Grill?!!!!

Only one issue I have with this method is that the steak cools down to much letting it rest.
So I rest it when it comes out of the oven and then sear it.
