This chili recipe has won NUMEROUS chili cook-off competitions. I have viewers routinely tell me it's the best they've ever had. What do you think?

Ingredients
5 strips uncooked bacon chopped*
1 large yellow onion diced (about 1 cup)
1 red pepper diced
3 cloves garlic minced (about 1 Tablespoon)
1 lb ground beef 455g
1 Tablespoon brown sugar
1 Tablespoon chili powder**
1 Tablespoon ancho chili powder**
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon onion powder
3/4 teaspoons ground black pepper
½ teaspoon salt
1/8 teaspoon cayenne pepper***
1 1/4 cup beef broth 295ml
15 oz dark red kidney beans lightly rinsed and drained (425g)
15 oz black beans lightly rinsed and drained (425)
14.5 oz diced fire roasted tomatoes undrained (411g)
1 7- oz can fire roasted green chilis 198g
1/4 cup tomato paste 66g
1 Tablespoon Worcestershire sauce
Preferred toppings particularly sour cream, shredded cheddar cheese, and corn chips

Instructions

00:29 Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain all but 1 1/2 Tablespoons of grease.
01:17 Add onion and pepper and cook until softened, about 3-5 minutes.
01:33 Add garlic and cook until fragrant (about 30 seconds).
01:45 Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add sugar and all spices (chili powders, paprika, cumin, onion powder, black pepper, salt, cayenne pepper) and stir well.
02:52 Add all remaining ingredients -- beef broth, beans, tomatoes, tomato paste, chilis, and Worcestershire sauce -- and your cooked bacon and stir well.
03:33 Bring to a boil and cook 1-2 minutes, stirring frequently.
03:45 Reduce heat and simmer, uncovered, stirring occasionally. Simmer for 30 minutes to allow flavor to really develop.
04:05 Serve with preferred toppings (sour cream, shredded cheddar cheese, and corn chips are a must!)

Notes
*For best flavor, DO NOT OMIT THE BACON. However, as someone who spent 23 years not eating bacon I wanted to include tips for those of you who might have the same restrictions. if you wish to make this recipe without bacon you *can* do so by skipping the first step, heating 1 1/2 Tablespoons of oil over medium heat, and then beginning from step 2. On the other hand, if you want additional bacon for garnishing, cook it now and reserve.
**You can substitute one chili powder for the other and use just traditional chili powder or just ancho chili powder, but I personally like the blend of the two.
*** This gives the chili a mild spice, if you like more heat increase to 1/4 teaspoon for a moderate spice. Add additional cayenne pepper at your own risk!

I've made this twice now and it is definitely the best chili I've ever tasted. Its easy to modify depending on what I have on hand and the first time I made it I used whatever beans I had in the pantry including chickpeas. I leave out the green chilis because I'm not a fan, but the level of heat and intensity of flavour is amazing. It has now become a go to recipe and I've already shared it with friends.

This is by far, the best chili I have made in 50 years. OMG, everyone on my list of friends and neighbors begs for just a little bowl. I am never going back to any other chili recipe EVER.

This is the best chili I have ever made, seriously!! We had just cooked a pound of bacon for breakfast and had the grease and alot of cooked bacon left over, so I jumped on this recipe. Sooo good, thank you!

Made this tonight for my son and I.. and omg it was amazing!! I doubled the recipe, added a can of beer (Modelo), 86’d the kidney beans, and added some cinnamon. Definitely a top 2 chili ever if not the best! Now I need to find a chili cook off to win 😎

Pretty sure this chile recipe is the internet winner.

This recipe is perfect as a base with so many ways to tweak it. I tried it last night and ended up doubling the batch—did a mix of 1 lb ground beef and 1 lb ground pork. Threw in 12 oz of dark Mexican beer for depth and added some roasted poblano for a little kick. A handful of frozen corn gave it a touch of sweetness and some color. Finished it off with sour cream, shredded seriously sharp cheese, a lime wedge, and some tortilla chips. It’s officially my new go-to for chili night—huge thanks to the chef!

Made this tonight. Followed the recipe to the letter with the exception of I used a home-made beef broth. Outstanding chili. Very very good. I topped with lots of Fritos, green onions, and chopped pickled jalapenos & carrots. No sour cream. Didn't need it because the heat is just right, and savory. The bacon and Worcestershire sauce work really well. Very well done!

Love the recipe. I won the office chili cook-off with it. The only alteration I made was to double batch it and then use one pound of hamburger and one pound of breakfast sausage. It was won hands down!

I used this recipe this week and won my chili contest at work!

I made a few small modifications, I added spicy sausage with the ground beef, I also just used black beans as I am not a big fan of kidney beans. My last modification was to add some heat to the chili and I oven roasted some Anaheim peppers, Big Jim peppers, 4 serrano, 4 cayenne and 4 jalapenos from my garden and blended them up with the beef broth. It added an extra kick, but didn't take away from the amazing flavor.

I made a second batch for the house as my wife doesn't care much for heat, so I just added the Anaheim and Big Jim peppers and, used regular Italian sausage instead of spicy and it still came out absolutely amazing.

I used this recipe in a cook off last November. Was my 1st time making chili and new to the cook off scene. I doubled the recipe and added a habanero and ended up winning 2nd place. Haven made chili since but i will be using this recipe again next month. Tks!
