My dad was a great cook. Loved to make Chile. I never had the chance to see his recipe. I miss my dad's birthday this was the last time I heard about the dinner. Rest in peace pop.

I’m from the “chilly needs beans” camp.
Good chilly needs meat and beans. That makes it a meal with cornbread.
If it’s just meat, it’s a topping for hotdogs or burgers.

Interesting- looks pretty good and Texas chili has regional variations ( we ate ours with white rice on the side in East Texas and of course any beans possibly served ( always pinto and always as a side) but never ever any sort of tomato sauce, tomato paste ect . Deep flavor was from a ton of chili powder and slow cooking and cheap cuts of beef like round steak cut in small cubes, maybe a pound of rough ground venison added or rough ground mild pork sausage . Slow simmer all day with addition of spices added throughout day and thickening at the very end of cooking is achieved with the addition of cornmeal .

The beauty of chili is that it has so many variations that are really good. As I live in Texas I have had traditional Texas chili many times without beans with cubed steak and dry roasted peppers. It’s very good as well however it really is more on the soupy side but that is traditional Texas chili. All variations are acceptable if YOU like it. We have enough to argue about these days no need to add chili to the list.

Mine doesn't have beans, either. For each pound of meat, I roast about a dozen tomatillos until they collapse and are slightly dark. Add those once you get the meat browned and do what you usually do. About 10 or 15 minutes before you're ready to eat, add two or three tablespoons of masa harina. I use an assortment of peppers, but not bell peppers. And I have to make it screaming hot! Serve over rice with sour cream, grated cheese, sliced jalapenos, chopped cilantro, a squeeze of lime...add a cast iron skillet of from-scratch cornbread and you'll have dancing tastebuds. 🙂

This is almost spot on to my recipe! I like to smash some tortilla chips up in a bag and add it towards the end to thicken it up! Much peace and love from Southern California ✌🏻🖤

Sounds like a great base recipe. Lots of variations or additions for personal preference. I like a few dashes of green Tabasco and worcestershire sauce for some depth/complexity. I like chili with beans or without. As always people want to hate. Coming from a chef of 25 years.

Needs salt and also searing the beef and the tomatoe paste before adding the liquid will make it much more flavorful

looks good, I always lightly brown my onion and peppers and saute my garlic then add the rest, and I also leave beans out because I am keto!

SOUP! Never saw chilli you couldn't ear with a fork. My mother would ask the butcher for a pound of chilli meat too. It was thick chunky meat. Add a lot more seasoning. Comino, cumin, garlic salt.
