My mother would fry eggs in butter and would use a spoon to baste the yolk with the butter .

I find a tight fitting glass lid also works. You can judge things to the second.

Every morning I cook myself 4 pieces of bacon and creamy grits with 2 eggs over easy busted on top of the grits. I like the way you did your no flip over easy, and I'll be giving that a whirl in the morning! Thank you Jack! I gotta say though, no one on the planet makes better grits than I do:) 1 cup whipping cream, pinch of salt, 1/4 cup quick grits and 2- 1/4" pats of butter. I put the whipping cream on medium in a pot and when it has a slight film covering the top of the cream, slowly mix in the 1/4 cup of grits. In about 2 1/2 minutes put in the pinch of salt and when the grits are almost done drop in the butter and turn the eye off while stirring til done. Try that and you too, will cook the best grits on the planet:) That's the mountains of TN, way:)
