Don’t listen to the hate — I love the creativity. Looks delicious

One of my favorite dishes at a higher end fusion restaurant does a kimchi carbonara with udon noodles and a runny egg that is unbelievable. Acid cutting through the fattiness of the egg, it’s beautiful. I wouldn’t call theirs a carbonara outside of the egg, but hey, it’s delicious.

I'm from Rome and I would try it! Still I would use guanciale and miss the cured egg, it feels too much in a recipe that's already pretty loaded
