I made this today. Since I don't have a veggie soup I used the water where I boiled the pumpkin, onion, and garlic and added chicken broth cubes. It's delish! Thanks for this recipe, I made my first pumpkin soup and it did not disappoint 🙂

Ok, so I'm a picky eater, and some textures set me off, but I tried this, and it's not bad. It's very simple and filling. I made a lot, so I'm gonna freeze the rest into cubes and save them for a later day.

Cost Plus World Market used to sell a delicious chipotle pumpkin soup mix that I looked forward to every fall, but they discontinued it a few years ago. I tried making pumpkin soup from scratch once but I either screwed up or followed a bad recipe. I tried this recipe today and apart from the chipotle flavor it tasted just like the soup I loved. The soup tastes amazing as is but I think I might experiment with chipotle seasoning to try and replicate that soup now that I have my perfect base line!
