Ok Chef - gotta say this is the BEST Carbonara recipe! Been following you for years love everything I have made from your recipes, but the Carbonara tops it all. It's the 1st time made without turning the eggs into a scrambled mess. Perfect execution and with my home made pasta this dish is the best we've had outside of Rome. Grazie !

I love this dish and order it frequently. I was afraid to make it as it is a bit tricky. Made it tonight with your recipe, even scored some peccorino romano which is not common where I live. Had to use pancetta however. But it turned out perfect. Thank you Chef Pasquale!
