Wow John, that injector is nuts!!! That rub is pretty darned tasty, so we'd go plentiful as well, and look at that gorgeous end result! It's going to pieces. We usually do low and slow for pulled pork, but we're using that rub again on a tri tip this weekend! That one will be kind of medium heat, medium time. Thanks for this great video John!

Like you I use a pan but I put it up on a grate so smoker goes around the whole roast. (At least in the beginning) I also smoke 250 to 275 for 2 hours before raising the temps. So mine get done much faster than the guys who run the whole time with low temps but it also gets more smoke from starting it lower and it stays real juicy in the end.

What temp did you set the grill to and did you leave it at the same temp for the entire cook?

You don’t need a smoker for that..!😅 you can cook it in the electric stove in your kitchen. The idea of cooking in a smoker is to get as much smoke penetrating as possible and a low temperature for a long time to melt the collagen..!

325 not realy hot and fast i do my butts at 285 .. hot and fast to me be about 450 500. look good thou. nice job
