This is how we make creamy tomato soup with fresh tomatoes from scratch with indoor hydroponic tomatoes we grew and documented the entire process and have more updates on them coming out soon in our how to grow indoor hydroponic tomatoes playlist linked below. We used cherry tomatoes and Roma but any tomatoes will work and many ingredients can be substituted with other things we just like it plant based (vegan). The recipe made one whole bowl of tomato soup, sense we wanted to use only tomatoes from the first harvest, which was a half a pound so you can always double or triple this recipe.
Made 1 bowl will need an immersion blender
1/2 pound of fresh tomatoes
1/4 of a red or white onion
2 large garlic cloves
2 Tablespoons of nutritional yeast(or parmesan cheese)
2 Tablespoons of miyokos liquid mozzarella(or any mozzarella)
1/2 cup of oat milk we used oatsome original(I like it with canned coconut milk instead)
1 Tablespoon olive oil for sauté
Salt and pepper to taste
First we chopped up the onion and added it with the chopped garlic and a tablespoon of oil to sauté on medium low heat for 3-5 mins till onions get softer. Then we added the cut in half tomatoes with the half cup of milk and the 2 Tablespoons of both cheeses with salt and pepper to taste. After another 3-5 mins it will darken in red color and its ready to be immersion blended till liquid creamy and then served.
