Real gelato is always of natural pastel colors. That's the reason I loved it so much and preffer it any day to the ice cream here in Germany.

A piece of advice in any Italian city, avoid eating in any restaurant in the historic center and try to move towards the suburbs or take advice from the Italians Because restaurants in historic centers are often scams and often sell frozen food like pizza (which is practically the same as what they sell in a normal supermarket)

My first week in Italy, summer of 2007, I was walking along la riviera in Pescara and saw a place selling gelati (Lido, if I recall). I did not speak any Italian at the time and just had very basic vocabulary in Italian. When the lady asked what gelato I wanted, I mostly pointed and made gestures, and everything was going fine 😅. Then, she asked me "vuoi panna?" (do you want cream?). But to me, who native language is Portuguese, that sounded like "pão" (bread). I refused, but it never occurred to me that Italians ate gelati with bread 😂😂

The best gelato we ever had when we lived in Milano, back in the 70s, was from what Americans call 'street vendors'. Have never had gelato that good since...😢

Was in florence a few weeks ago. In the square in front of santa maria cathedral are these gelato shops called best in the world or something with massive lines. The ice cream looked exactly like that. Behind the cathedral were these 2 smaller parlors. Amazing gelato, no line what so ever.

I use to work at a Gelato factory and I was taught that real Gelato and sorbeto shouldn't have any air in at all the only flavors we had air in it were ones with alcohol in them.

I feel like strawberry was the worst example to pick for the colour, I have actually achieved a similar colour in my strawberry desserts by using frozen, powdered strawberries and homemade strawberry jam. Both forms have most of the moisture removed allowing for a much stronger strawberry flavour (and colour) than is possible with fresh strawberries. It’s even easier to get the colour with raspberries though, the pigment is so much stronger.

I want my desserts to actually taste like the fruit I’m using and I figure out texture and consistency afterwards by altering the recipe bit by bit, I feel like so many people are afraid of impacting the texture that they skimp on the amount of fruit and consequently they end up sacrificing flavour which is the most important part. My biggest gripe about most banana breads for example is that I can’t actually taste the banana, so my recipe uses double the standard amount so you can actually taste it.

I interned (washed dishes) for Chef Settapani and his son, Sal. They were world pastry champions and I'll never forget the taste of REAL gelato. Don't fall for this!
