In this video I go through the steps to making a delicious slow cooker chili. It is the perfect belly warming dish for when you need to feed a crowd.

This chili does require quite a few different ingredients but is well worth it. Most of the ingredients are on the cheaper end so it shouldn’t be too hard finding everything for a reasonable price.

• 500g (17 ½ Oz) Beef Mince
• 1 Brown Onion, diced
• 2 Tsp. Crushed Garlic
• 1 Red Pepper, diced
• 2 Tbsp. Tomato paste
• 1x 400g/14 Oz Can Red Kidney Beans
• 2x 400g/14 Oz Cans diced Tomatoes
• 1 Tbsp. sugar
• 1 tsp. Ground Cumin
• 1 tsp. paprika
• 2 tsp. Chili (Flakes, Fresh or powder)
• Salt & Pepper

There are just so many things that go amazing with a good chili con carne. For example, one of my favorites is to top it with some cheese and sour cream. Also dipping some fresh bread into the chili is amazing as well.

Make sure you don’t throw any of the leftovers out as this reheats really well. You can just reheat as is or you can be a little creative and make something like chili cheese fries, nachos and tons more.

In the video I fry the beef, onion and garlic off before adding it to the slow cooker. You can actually skip this step if you’re running low on time. There will be a little difference in texture and flavor but nothing too radical.

The sugar is important as it will help remove the bitterness that tomatoes often has. You shouldn’t need any more than the recommended amount.

I put a couple of pieces of 70% cocoa dark chocolate in the mix too & used steak mince rather than normal mince & some red wine, it's bubbling away in the slow cooker now after I'd fried it all off in the skillet! It's going to be epic!

The slow cooker chili tasted better the next day. The ground beef absorbed all the flavors of the spices, tomatoes, garlic, etc. after sitting in the refrigerator overnight. Reheated the chili and it was even more delicious.

why do I have to cook the mince first if I am using 5% lean mince? I usually just throw everything into the pot in one go

Looks great.

Maybe I would fry the tomato paste with the minced meat and onions for few minutes to get rich flavor and deglace with 200 ml of espresso/coffee, reduce it a little. Try it out with plus dried Oregano, Coriander powder, Bay leafs and 1-2 Tbsp. of Worcestershire Sauce.
It will lift up the already tasty dish to an even tastier heaven :DD
