My mom used to do this all the time before she passed. I haven’t had any since. But after seeing your video I’m going to cook some and I know my grandson will be happy because he misses it. Thank you so much for sharing.

For 76 years I have screwed up fatback. It is either over cooked or raw with none of that crunchy skin or thrown into the trash. It is 6:39 eastern time and I am headed to my kitchen to try your technique. I’m starving just thinking about it. Fat back cooked correctly is better than steak. My eating out restaurants are chosen by who has the best fat back. Thank you a million times for sharing. FYI try fat back with ice cream. It is scrumptious.

I haven't had fatback in YEARS but I wanted to cook some cabbage and the store was out of ham hocks. I bought salted fatback and I remembered that you have to boil the salt out of it. After 15 minutes of boiling and 20 minutes of stove top frying...well, the fatback never made it to the cabbage. I snacked on it like a starving person. It was that good.

Haven't had good fatback since my mama died 43 years ago. Yours looks delicious. Can't wait to make some! Never thought about cooking in oven instead of frying on top of stove. Thank you for sharing. God bless.

Very nice video. I'm from Mississippi and my Dad used to cook fatback when we were kids in greens or sometimes fried just to make sandwiches.

Looks Good! My grandmother was from Italy she cook the grease out of fatback. The grease is what she started her spegetti sauce in.
