I use less salt and love the taste of fermented carrots!! My last jar I added garlic and dill!! So yummy!!

Thanks for this video! I make fermented sour pickles and have some in fridge now! Maybe add garlic and dill to your carrots too. I have those lids, so great! Xander is just adorable and wish you were still making videos…have you ever done radishes?

Just a question: does the carrots need to keep submerged in the brine even when the fermentation is over and when we store it in the fridge? Because is it impossible, they always float when I put out the weight that was in the container.

I had been having some got issues on and off for the last few years and went gluten-free and dairy-free about 2 years ago which helps some. I was diagnosed with Hashimoto's in my twenties which is an autoimmune disorder and most medical doctors aren't aware yet there is a big connection between autoimmune disease and gluten..Anyway... I wanted to ramp up my health even more as this has been a fairly stressful time in my life which seems to exacerbate any intestinal issues. I first began by re-reading a book I had many years ago called the Maker's diet which I recommend but then ran across another book called The Hallelujah diet which focuses on mostly vegetables with some fruit some whole grains nuts and seeds..No meat, No dairy. I began this diet almost a month ago and I have to say I have absolutely no got issues. I would also highly recommend that you look into the Daniel Fast which is taken from The Book of Daniel. Just wanted to share these things as I I think you would appreciate them as a sister in Christ.

U said u mite let them ferment more...do u let them sit out of the fridge again to ferment more or do they continue fermenting while in the fridge? Also, can this same process (1qt water to 2 tbs salt) be used with other veggies (cauliflower, broccoli, cucumbers, ect)?

I did the carrots using glass weight and fermenting lid. After leaving jar sit out for 2days it started to foam out of lid. Is that normal?
