Looking for a healthier cold salad? Here it is - Barley and Mushroom Salad.

Barley contains a potpourri of health benefits. It contains vitamins B1, B2, B3, B6 and B9; iron, selenium, protein and high in fiber. It’s a great low fat and low cholesterol food.
Hulled barley has the outer shell removed leaving the bran and hull intact. Barley with the hull contains more fiber making it a healthier choice in barley. It takes longer to cook and has a stronger taste.

Pearled barley does not have the bran or hull. It cooks faster and has a more palatable taste.

I’ve never made barely but looks so good with the mushrooms and I like the full meat you showed at the end all put together.
