Macaroni and cheese is such a classic dish and can be made in lots of different ways with lots of additional extras to take the flavours to new heights. In this one, bacon is cooked down to render the fat and the remaining ingredients are then cooked in that fat to create the most beautiful flavour. I hope you enjoy it and thanks for watching!

Serves - 6 To 8

Ingredients -

300g (10.5oz) - Streaky or Back Bacon, Large Diced
2 tsp (20g) - Dijon Mustard
10g (0.3oz) - Thyme, Roughly Chopped
5 - Garlic Cloves, Finely Chopped or Minced (Use 4 Cloves)
1 1/2 Cups (375ml) - Chicken or Vegetable Stock
300g (10.5oz) - Macaroni Pasta
2 1/2 Cups (625ml) - Full Fat Milk
1/2 Cup (125ml) - Thickened Cream (Substitute for Full Fat Milk)
1 1/3 Cups (330ml) - Chicken or Vegetable Stock
50g (1.7oz) - Plain (All-Purpose) Flour
200g (7.05oz) - Cheddar Cheese, Grated & Divided
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste

Really beautiful, Jack I have made this before but the first time I followed a YouTube recipe and it was desperate, the second time I used less cheese and it turned out much better and tomorrow I'm going to try it your way because the recipe in yours is different and looks far better. Hi Jack just to let you know I cooked this yesterday and it was ok not as good as yours but ok but I put the left overs in the fridge and now I heated some up again in the microwave and shredded red cheddar and sprinkled it over it and microwaved it again for another minute to melt the cheese and just eating it now and must say it is 100 times better eating it the second day like stews when it matures over night the stew is always better the next day. Thanks a million for your great help. I'm going to make more during the week just for freezing in portions

This looks amazing, and I can almost smell that bacon! I love that you added the 20 cracks of black pepper to the top. I could hardly make it without my 2 pepper grinders—one for black pepper and one for white.
