MAC AND CHEESE, the ultimate, MAC AND CHEESE! Oh my. Oh my. We ain’t playing around with this one, this is a classic. An indulgent and heavenly treat. If you mac, you mac. If you cheese, you cheese. But if you wanna mac and cheese, then do this recipe. Get it in my mouth, again.

knob of butter
3 onions, finely sliced
3 Tbsp flour
1L milk
500 g macaroni
100 g cheddar, grated
100 g raclette or gruyere, grated (for stringiness)
parmesan (no amount given), finely grated
1 tsp prepared english mustard
1 generous tsp mango chutney
couple of shakes of worchestershire sauce

topping:

3 strips bacon, chopped small
fresh thyme
garlic
some breadcrumbs (maybe a cup or a bit more)

1. saute onions in butter - 15 min - browned and very soft.
2. add flour, stir
3. gradually add 1L milk - let it simmer and thicken while cooking pasta (only half-cook the pasta, about 5 min)
4. grate all cheeses together
5. take out some of the pasta water, and set it aside
6. take sauce off heat - add cheese, reserving a handful for on top later
7. add mustard, chutney, and worchestershire
8. add some of the reserved pasta water, til creamy and sloppy
9. add macaroni and stir
10. pour into rectangular baking dish and sprinkle reserved cheese on top
11. bake at 400F for 30 min
12. saute bacon, thyme, and garlic
13. when bacon is lightly golden, add breadcrumbs
14. stop when it’s all crunchy and golden
15. mac’n’cheese should be well-browned on top
16. plate it with some crunchy bacon/breadcrumbs on top

Recipe because I wrote it down so why not share it...

Melt butter
Add 3 sliced onions until soft and browned
Add 3 tbsp flour and stir
Add litre milk bit at a time, stir
Simmer while pasta cooks
500g pasta in boiling water
Grate 100g cheddar, 100g other (raclette or gruyere) and some parmesan
5 minutes cook pasta, save a jug of water
Drain pasta
Sauce off heat and add most cheese to sauce, stir
Tsp mustard, stir
Tsp mango chutney, stir
Little bit of pasta water, stir
Add pasta, stir
Swig of worcestershire sauce, stir
Put in a big ass dish with rest of cheese on top

Oven for 200°C 30 mins

Bacon herbs garlic in a pan, add breadcrumbs until golden

Mac and Cheese: 
Butter
3 White Onions
Flower
Milk (1 liter)
Macaroni (500g)
Cheddar (100g)
Raclette (100g)
Parmesan (100g)
English Mustard (1 tsp)
Mango Chutney (1 tsp)
Worcestershire sauce 
Lettuce (optional) 

Pangritata:
Bacon 
Italian herbs
Breadcrumbs

My Favorite Mac & Cheese... I keep searching this video to remind me of proportions, so I finally wrote it down to share the recipe with family (in US measurements) - thought I'd share it with you too!
Jamie Oliver’s Ultimate Mac & Cheese
3 Onions
2T Butter
3T All-Purpose Flour
4C Milk
1T English Mustard
1T Mango Chutney
3 Swigs Worchester Sauce
1lb Macaroni Pasta
4oz. Fresh-grated Cheddar Cheese
4oz. Fresh-grated Gruyere or Raclette Cheese
2oz. Fresh-grated Parmesan Cheese

Topping - Bacon Pangritata
3-4 Strips of bacon chopped to cook crumbled
2+ Finely Chopped Cloves of Garlic
2+ Sprigs of Fresh Thyme
~2C Unseasoned Bread crumbs


Preheat oven to 400º F. Thinly slice onions and melt butter in a pan. Add onions and a dash of salt to melted butter and cook, stirring occasionally on med-high to caramelize – will take 15-20 minutes. Meanwhile, bring a pot of salted water to boil. Once onions have caramelized, sprinkle 3 T flour over the onion butter mixture and stir to combine: 1-2 minutes. Slowly add milk a little at a time while stirring to keep lumps from forming. Simmer until “silky and gorgeous.” While the sauce is thickening half-cook the macaroni in boiling water for 5 min. (pasta will “suck up the flavor” and finish cooking in the oven). Reserve a cup or so of starchy pasta water. Remove the saucepan from the heat and stir in Mustard and Worchester sauce. Add grated cheese (leaving some to sprinkle on top), stir until melted, then add undercooked pasta and pasta water as needed for an “oozy, silky” saucy consistency. Pour mixture into a casserole dish, top with reserved cheese, and pop in the preheated oven for about 20-30 min.

Topping:
Crisp bacon in a pan, add garlic and fresh herbs until fragrant, toss in breadcrumbs and stir until golden and crispy.

Remove the pasta dish from the oven, top it with the Bacon Pangritata, and then do the Jamie spoon dance - because it is THAT delicious.

Jamie still gets excited about his dishes and I still wish I was on site to "taste" whatever he serves up. This dish has some really interesting riffs to make it come together that I would have NEVER thought to add ( if I could have cheese) but I hope people try it and post how it turned out. This is a classic comfort food taken to another level.

This recipe is really out of this world. The Taste with the chuttney go with it and the bacon/crumps around it, is bonkers. Even the kids couldn’t stop eating. Thank you Jamie for this amazing inspiration of great food!
