No-bake White Chocolate Raspberry Cheesecake Recipe! ASMR

Ingredients:

For the base:
350g shortbread biscuits
100g butter, melted

For the cheesecake layer:
250g white chocolate
350ml double cream, cold
500g cream cheese, room temperature
120g icing sugar
250g raspberries

For the topping:
170g white chocolate
90ml double cream
Raspberries
Freeze dried raspberries

1) Line an 8" springfoam cake tin with baking paper.

2) Finely crush the shortbread using a blender.

3) Pour the crushed shortbread into a bowl and mix it with the melted butter until combined.

4) Pour the mix into your cake tin and press it down firmly.

5) For the cheesecake layer, melt the white chocolate in the microwave on medium (500W), stirring every minute until melted and smooth.

6) Add the double cream to a large bowl and whisk to stiff peaks.

7) Whisk the cream cheese and icing sugar together in another bowl until combined.

8) Once the white chocolate is cooled slightly, whisk it into the cream cheese mix.

9) Fold the (now whipped) double cream into the mix.

10) Add the raspberries and fold them in.

11) Scoop the mix onto your base and smooth it out.

12) Refrigerate overnight.

13) For the topping, microwave the white chocolate and double cream together on medium (500W) for 1 minute.

14) Stir it gently until smooth, heating it up again if needed.

15) Carefully run a knife around the edge of the cake and remove the ring.

16) Pour the white chocolate topping over the cheesecake and smooth it out.

17) Decorate the top with raspberries and freeze dried raspberries.

18) Let it set in the fridge for 1 hour.

19) Enjoy!

it's beautiful, but those raspberries have seeds, I like blending the raspberries with some lemon, straining them to remove the seeds and I cook it until it's jam, I add 1 Tablespoon Agave stir it in and then I pour the jam contents into a Ziploc bag, cut a corner of the bag and drizzle the jam across the cheesecake then I take a toothpick and go, side to side to make a pretty design, but I liked the idea of adding some white chocolate to the cheesecake filling instead of adding sugar, I would have just used 1 chocolate bar for the whole cheesecake 😊
