RASPBERRY CHEESECAKE

Ingredients:

For raspberries jam:

-Fresh raspberries 1&½ cup (200g)

-Lemon juice 2 tbsp

-Brown sugar 2 tbsp

For biscuits base:

-Biscuits 200 g

-Butter ¾ cup

-Brown sugar 2 tbsp, or no sugar if your biscuits are sugary enough

For cheesecake mixture:

-White chocolate chips 1 package (225 g)

-Whipping cream 4 tbsp

-Cream cheese 600 (I use Philadelphia)

-Vanilla extract 1 tbsp

-Powdered sugar 3 tbsp

-Gelatin in the cheesecake mixture: gelatin powder 1 tbsp, cold water 2 tbsp

-Whipping cream in the cheesecake mixture: whipping cream 1&½ cup, powdered sugar 3 tbsp

For decoration:

Fresh raspberries about 1 cup
