How Gin is made at Isle of Harris

The core ingredient of Isle of Harris Gin is sugar kelp, a type of brown algae that tastes slightly sweet. The seaweed is harvested in the spring from the island's local lakes and then dried. A sustainable harvest provides for the sugar kelp to be allowed to regrow during the cooler months. The seaweed gives Isle of Harris Gin its distinctive maritime character, while classic gin botanicals such as juniper berries, coriander seeds, cassia bark and angelica root provide the typical spicy-sweet gin flavor. Orange peel, cubeb pepper, licorice and iris root emphasize the maritime aroma of the gin in small quantities.

We were allowed to visit the Isle of Harris distillery and got exciting insights into the production of the gin, which we do not want to withhold from you.
