It's stupid to avoid skin. Skin is usually good source of omega 3 EPA/DHA, also often GLA and even some CLA which are highly beneficial fatty acids. Also, under the skin there's lot of vitamin D and some of vitamin A. Skin is also source of collagen which can be very healthy for digestive tract.
