The first thing most Americans are likely to think of when they hear the phrase "canned fish" is tuna. And while canned tuna has lots of potential uses, there's another type of canned fish that can be just as useful, and may even be better for you: salmon.

It may surprise you to learn that canned salmon has an even longer history than canned tuna does. Even though it requires a little more work — you'll have to remove some skin and bones unless you buy particular types — it's absolutely worth using in lots of different dishes. Here's the untold truth of canned salmon.

The best canned salmon comes in those funny shaped cans that are wider on one end than on the other, and only open from one side. The reason is this. Those are used on fishing boats that catch the salmon and can it right on the boat. They stack like McDonald's cups when empty, and the fish is packed continuously when caught, until the ship's inventory is full and they deliver it to land and pick up more empty cans and keep fishing. This means that shape of can tells you the fish is wild-caught as well as canned immediately, not rotting in the boat till it gets to a cannery

Don't underestimate the mercury in tuna. I've been eating fish all the time for many years. I was eating canned tuna and tuna sushi and sashimi a lot. At an annual checkup, I asked if I could be tested for mercury. My doctor came back with, "Turns out your mercury count really is high. Better cut down a lot." I don't think I had any of the symptoms that popular medical advice websites cite.
I really appreciate this vlog post. I'd like to see a comparison of salmon and sardines.

So now you have told us about canned salmon. How about telling us about canned mackerel fillets in tomato sauce, as it's delicious!

When I was young many years ago I lived in Alaska and worked at a fish processing company. The fish would come in fresh off the boats in 3000k totes. We would gut behead and clean and rack the salmon. They were graded 1, 2 and 3 for what type of shape they were in. Number ones were sold fresh to stores, restaurants airlines etc. Number two's were froze and boxed and sold to stores as well. Number threes were pretty nasty and almost rotten and they were froze and sold off to the canneries. So there you go! Only the worst went to be canned. I still eat canned salmon though.

Besides some vitamins I take, I eat one meal a day, about a pound of canned salmon. I also eat the bone and skin. I fry it in patties with a couple of table spoons of extra virgin olive oil. I mix the pound of patties with a tea spoon of powered onion and a couple of table spoons of almond flour. I believe that qualifies as a keto diet. I'm usually on this keto diet about six days a week.

One day a week I will eat out, a pizza, hamburger, fried chicken, etc. But on that sin day, even though I'm getting a lot of carbs in the pizza crush, bread, etc, and probably some less healthy vegetable oils, I still stay away from high sugar substances like soft drinks, deserts, etc. But I'm not keto that day.

I hope that one sinful meal a week doesn't undue the benefits of the other six days. Considering the massive amount of omega three I get during those six days, I doubt the omega six I'm getting from vegetable oils during sin day will matter. I just hope one day of a decent amount of carbs isn't too much of a bad thing.

I can't stand almost any canned fish. I used to eat it years ago but when I started catching my own Tuna and preparing that, couldn't eat canned again. When I was stationed in Alaska we used to go to the cannery and buy sleeves of cans and can our own Salmon. Far cry from commercially canned fish.
