INGREDIENTS
6 bone in skin on chicken thighs (about 3 to 4 lbs)
2 tsp paprika
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried parsley
salt and black pepper to taste
olive oil
1.5 lbs gold potatoes
2 Tbs butter
1 medium onion
6 huge cloves garlic
2 Tbs flour
1 cup chicken broth
1/2 cup heavy cream
1/2 cup whole milk
1/4 cup parmesan cheese
1 chicken bouillon cube
1/3 cup freshly chopped parsley
DIRECTIONS
* Mix together the salt, pepper, thyme, basil, oregano, parsley
rosemary and paprika
* Season chicken thighs on both sides with the spice mixture
* Heat up oil in pan over medium heat and sear chicken, skin side down, 3 to 4 minutes on each side or until golden brown.
* Remove the chicken from the pan and set aside for later
* In the same pan, add cut up potatoes, season with salt and pepper, then partially saute them for 8 mins, stirring periodically.
Make the creamy sauce in a separate pan while potatoes are cooking
* completely melt the butter on medium heat.
*Add minced onion and saute for 4 mins or until golden brown.
* Add the garlic and saute until it gets fragrant , about 30 seconds.
* Add the flour and cook for a minute to kick out the flour taste
* Add the chicken broth, and let the sauce cook and
thicken
* Add the milk, heavy cream, parmesan cheese, chicken bouillon cube, freshly chopped parsley then cook for a minute to let the flavors come together.
*ADD seared chicken thighs on top of potatoes and pour the creamy sauce all over it.
* Bake in a 400F / 204C oven for 35 to 40 minutes.
* When it comes out of the oven, let it sit for 10 minutes before serving
