Healthy Quinoa Salad with Feta Cheese and Chickpeas

Watch this video if you want to know how to make a healthy Quinoa Salad. This recipe contains chickpeas, feta cheese, fresh herbs, red bell pepper and a few other ingredients. What I like about this recipe is that you could make it in advance and either eat it for lunch or as dinner. You could bring it to a BBQ party or to a picnic in the park. If you plan to eat this for dinner I would recommend you to add some grilled shrimps on top :-D

⫸ INGREDIENTS (4 servings)
● QUINOA | 1 cup | 200 grams
● CHICK PEAS | 8.5 oz | 240 grams
● RED BELL PEPPER | 1
● RAISINS | 1/3 CUP | 50 grams
● ALMONDS | 1/3 CUP | 50 grams
● LEMON | 1
● LIME | 1
● OLIVE OIL | 1 tablespoon
● CUMIN | 1 teaspoon
● FETA CHEESE | 2.5 oz | 70 grams
● FRESH MINT | a bunch
● FRESH CORIANDER/CILANTRO | a bunch
● SALT & PEPPER
