Quinoa Salad

I've had this Quinoa Salad the last five days in a row. It's colourful, fresh and super filling as it’s packed with protein and fibre. It's also vegan, gluten free and dairy free.

I love simple recipes like this. I like keeping the chopped veggies (except avocado) and quinoa in separate containers. Then every day you just toss everything together and add fresh dressing. Yumm.

Why not use different onions if you don't like the bitterness of red onions? Do you just choose red for the color?
