Chipotle Chicken Bowls 🍗🌶️🍚
Servings: 5 bowls
Serving Size (cooked weight): 158g rice, 86g beans, 72g peppers and onions, 136g chicken, 72g corn, 47g romaine lettuce, 40g vinaigrette
Macros: 733 cal, 59g P, 15g F, 91g C
Chipotle Chicken 🍗
-2 lbs chicken breasts or thighs
-1 can chipotle peppers in adobo sauce
-3 tbs avocado oil
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs ground cumin
-1 tbs smoked paprika
-1 tbs dried oregano
-2 tsp salt
-2 tsp pepper
-juice of one lime
Instructions:
-add chicken to a bowl with everything listed; mix well
-marinate for at least 2 hours
-grill at 400F until internal temp is 155F
-rest for 10 min before cutting
Cilantro Lime Rice 🍚
-3 cups uncooked white rice
-5 cups water
-dried bay leaf
-3 limes
-1/2 cup chopped cilantro
-2 tsp salt
-3 tbs avocado oil
Instructions:
-add washed rice and water to a rice cooker and cook
-transfer to a bowl; mix with the rest of the ingredients
Black Beans 🫘
-2 cups dried black beans
-4 cups water
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp paprika
-2 tsp ground cumin
-2 tsp dried oregano
-1 tsp salt
-1 tsp black pepper
-dried bay leaf
Instructions:
-wash beans; add into instant pot
-add seasonings; mix well
-pressure cook for 50 min until tender
Peppers & Onions 🫑
-2 bell peppers, thinly sliced
-1 red onion, thinly sliced
-2 tbs avocado oil
-1 tsp dried oregano
-1 tsp salt
-1 tsp pepper
Instructions:
-add everything to a bowl; mix well
-grill at 400F for 8 min until tender
Corn Salsa 🌽
-2 cups frozen white corn
-half of a red onion, diced
-1 jalapeño, diced
-salt, cilantro, and lime juice to taste
Instructions:
-boil corn until tender
-strain water; mix in the rest of the ingredients
Chipotle Honey Vinaigrette 🍯
-1/2 cup olive oil
-1/3 cup honey
-1/3 cup apple cider vinegar
-3 garlic cloves
-2 tbs canned chipotle adobo sauce
-1 tsp ground cumin
-1 tsp dried oregano
-1/2 tsp salt
-1/2 tsp pepper
