I’m Mexican and I have never added lime. I do blend fresh tomatoes, onion and garlic for taste.

My rice comes out fluffy without lime. My advice for fluffy rice for white or red rice is to have the rice come to a boiling point then lower the temperature to Low. Perfect rice every time.

Jasmine rice is best for Mexican rice👍🏻I switched from long grain to jasmine rice 13 years ago long grain rice gets mushy and boy does everyone love my Mexican rice. You can use both fresh tomatoes, tomato sauce 🥫 each one is good and different flavor. My mom uses sauce I use both nothing wrong everyone has their own recipe.IF OU WANT YO USE LEMON/LIME GO AHEAD NOTHING WRONG WITH IT! 🙄I’ve never tried lemon/lime but I will now just to try it ! Btw, my rice comes out fluffy EVERYTIME and sometimes I add more liquid for a saucier rice too

Awe guys! I’m just now figuring out how to get my rice fluffy & I’ve been so happy & so proud 🥲 I have a white husband & he doesn’t know any better bless his heart, the flavor has been on point, but the texture has been my struggle & now I’m finally getting it I think I’m finally winning that battle 🤗🇲🇽

Blend the real tomatoes and onion then pour instead of using tomato sauce.

My wife uses basmati rice. It cooks way better than long grain white rice.

The secret ingredient is for every 1 cup of rice is 2 cups of water. And it comes out fluffy after it is done cooking you fluff it up.

Every Mexican family cooks differently. For instance, my mom refuses to use tomato sauce and only uses actual tomatoes. Also, we've never used lime but either way your rice looks good. I think every family makes it a little differently which is cool.

ok ok II LOVE YOUR RECIPES! They are spot on! NOW HERES A MUST TRY...my husband turned me on to adding just a few Rajas de bell pepper. Just do every thing as you do...and float 3 bell pepper rings on top. The flavor is awsome and it protects the rice from burning as it keeps providing condensation. TRY IT!ITS CRAZY GOOD

I wash my rice first, then I Brown the rice and onions cz that helps the rice fluff when u wash your rice, and then I blend fresh tomatoes, onions and fresh garlic for my rice😊

I only put a small amount of oil. The more oil you add will make it oily. It never sticks if you're using a non-stick pan.
