I wish I could give you 10 👍🏼 because this looks amazing. Just a side note, you always tell people they can use canned tomato sauce, but once they try finely grated fresh tomato’s they will NEVER want canned ones again! The canned pales by comparison. That looks incredible. When I make tomato sauce for spaghetti and pizza I use a tablespoon redwine vinegar and a small bit of balsamico which I also find adds a lot to the flavor. Gonna have to try the sherry vinegar as well.

Well done Albert, a great recipe for a multitude of virtues. I hope you don't mind my comments in some of the threads which are simple observations without any criticism. Putting a fried egg on top is the ultimate Spanish compliment and a stranger to folk outside Spain. Strip it down and have it as a pintxo like you - except in Pais Vasco where something else would be added, like some bacalao to big it up even more.

Absolutely incredible. This is very similar to the way I have made tomato sauce for years, but never with sherry vinegar. This is my first time to even hear of it. I always have used lemon juice. It looks delicious, especially with the egg. Thank you!

I just made some for my lunch and it was delicious! I didn't have fresh garlic, so I used garlic powder. I also used green onions instead. I did not have any peppers, sherry vinegar or parsley unfortunately. However, it was still amazing! I had leftover chick peas in the fridge and threw those in to simmer with the sauce, then put it on top a bed of jasmine rice! It was delightful! 😋I'm loving that tomato grating technique, it's brilliant! Thanks for making such great, relaxing cooking videos!!

Nicely done👍. The Mexican version would be similar. My mother made the same sauce but instead of green pepper she used a mild jalapeño pepper, and instead of sherry vinegar she would use a little red wine vinegar. Then she would heat 2 corn tortillas in EVOO until slightly crispy, place them on paper towel to remove excess oil and with same pan, heat one egg sunny side, once cooked, place that egg 🥚 on top of the corn tortillas and pour some of that tomato 🍅 sauce on it. Instead of parsley, she used coriander. One tortilla to be eaten with the egg and sauce, the other was for the sauce left over on plate🙂

We're heading for very short sunlit hours here in the UK and 'tommies' won't be as good as they were in summer. So many thanks, Albert, for giving a shout-out to tinned/canned tomatoes. They are picked at the peak of ripeness and are a great way of getting some delicious tomato flavour into the British diet even in late December.
