How to cook Bok Choy (Baby Bok Choy) - simple and delicious

This simple recipe brings a uniquely delicious flavor to bok choy and preferably, use baby bok choy for extra tenderness. If you find yourself cooking the same vegetables regularly, then now is the time to try something different - Baby Bok Choy, made with simple ingredients - it's both quick and easy but the taste is amazing. Enjoy :)
Bok Choy (Baby Bok Choy)
Ingredients
• 1 lb (454 gm) Bok choy (preferably, baby Bok choy)
• 1 garlic clove, minced
• ½ sweet onion (or 2 shallots) sliced thin and then diced (~ ¾ cup – 1 cup)
• 4 TBSP Extra Virgin Olive Oil (EVOO)
• 1 – 3 TBSP (to taste) regular dark soya sauce
• ¼ - ½ tsp sesame oil
• Salt to taste (optional)
Process
• Wash Bok choy and cut large leaves into smaller portions (spin dry in lettuce spinner or dry with a cloth)
• In a large frying pan, add the EVOO and the garlic - cook the garlic for 30 seconds. Then add the onion and cook till soft, about 5 minutes
• Add the Bok choy, put a lid on pan, and cook on medium heat for about 5 minutes
• Stir to coat the Bok choy with the EVOO/garlic/onion – then put lid back on and cook for about 3 more minutes.
• Add 1 – 3 TBSP soya sauce and mix to coat evenly. Drizzle sesame oil over top and mix again to coat evenly
• Serve and enjoy
