The Perfect Holiday Dinner (Homemade Peking Duck)

A holiday dinner should be special. So let's not make the same thing over and over and go a little more interesting... homemade Peking duck with all the fixings.

FOLLOW ME:

Ingredients Needed:

Chinese Mandarin Pancakes: 
* 2 cups (300g) all purpose flour 
* 1 cup (237ml) water
* 1 tablespoon (11g) sesame oil 

Honey Plum Sauce: 
* 1 lb (16oz) fresh plums, pitted & chopped w/ skin
* 1/4 cup (59ml) rice vinegar 
* 1/4 cup (58g) sugar 
* 2 tablespoons (38g) honey
* 2 tablespoons (30ml) shaoxing wine
* 1/4 cup (52g) sriracha 
* 2 tablespoons (26g) dark soy sauce

Five Spice Sichuan Seasoning:
* 4 tablespoons (72g) kosher salt
* 2.5 tablespoons (31g) granulated sugar
* 1 tablespoon (5g) Chinese five spice
* 1.5 teaspoons (6g) Sichuan peppercorn powder

Maltose Glaze: 
* 3 tablespoons (45ml) shaoxing wine
* 1/4 cup (86g) maltose
* 2 tablespoons (24g) Chinese red vinegar 
* 1 tablespoon (12g) Chinese black vinegar 
* 2 cups (473ml) water

To Serve: 

* 1/2 cucumber, very finely julienned 
* 1 bunch of green onions, ultra fine julienne
*Optional*  1 cup pickled carrots

As someone who's from the same city as Peking duck, the seasoning is not what restaurants in Beijing use, the sauce is usually tianmianjiang (a sweet, soy bean paste based sauce), and the pancakes are usually steamed. But the methodologies are on point and it looks delicious!! Tip: try dipping the crispy duck skin in granulated sugar!

The Chinese rice pancakes are actually steamed believe it or not. Its also so thin that its translucent. Either way, great video Joshua! Love that you are sharing chinese recipes to your audience

as a honger konger, peking duck is always served with cucumber, scallions, and hoisin sauce (i’ve seen it served differently in several regions of china but this is my experience in HK). the pancakes are also so thin you can see your finger through it. this is a nice starter recipe but if you’re short on time a good store bought hoisin is not an untraditional replacement. my only critique is that josh’s pancakes are too thick. otherwise this is an amazing recipe for people wanting to switch up their holiday roast bird :)

As someone who grew up and lived in Beijing for 15 years I’m so excited to see this video, it brings back so much nostalgia, so thank you. Inflating air between skin and meat is literally on point, haven’t seen many people done it correctly, bravo! But typically no seasoning is used on the duck itself, it’s supposed to be bland. As for the dipping sauce in the wrap itself, we use Tianmianjiang, something most people / restaurants just purchase instead of making. And the plum sauce is good, but it’s usually done for the skin itself, more often tho, granulated sugar is used for skin - it’s the most wonderful combo of sweet and fatty. And I have never seen carrots for Peking duck, but why not!

We often used an air compressor at my old job instead of a bike pump, for 1 or 2 ducks it’s not an issue but when you’re doing 10-15 a day it’s a huge timesaver. We would brine for 2 days, then pump, then wash in water/rice wine vinegar solution, then wash in water/maltose solution. Then air dry it in a fridge for 2 days before cooking.


If I can add a tip: get someone to pump for you. If you have a firm hold on the open cavity and the skin around the neck (which requires 2 hands) and have someone else pump, you’ll get good separation across the entire duck with a lot less pumping. You want to make sure you trap the air as best as possible.

I'm from Beijing, the Peking Duck is definately not something you want to cook at home, so I'm so impressed by Joshua. Although this recepe is not the most authentic, but I'm glad Joshua can introduce this dish of my hometown food to the west.

My mom has always been against breaking tradition and my family always ends up with the same dry turkey and boring casseroles invented in the 50s. I finally convinced her last year to let me be in charge of the food for the holidays. I bought the popeyes turkey and made appropriate southern style sides for thanksgiving, and then i did this peking duck recipe for christmas. Both were a huge hit with the family 😂

The way you cut up duck is the same way many roast meat sellers do it in my country too haha. One added thing. Having tried my fair share of Peking Duck in the motherland, one of the best things ever is the leftover carcass. Most high end restaurants will ask you what you wish for them to do with it after they carved the duck up tableside. When I bought 2 ducks for my table, I had one carcass be chopped and deep-fried, served with plum sugar. The other, well. I had them make it into a soup. Which was fucking divine.

Josh I love you and I think you are the king of bread. and i love the fact that on your channel, we can learn so many different cuisines because you are super cultured! I am chinese but i do love the duck with plum sauce even tho it is not the most traditional choice (i also love that). The only different thing is that we have that tortilla thing super super thin (almost transparent). In restaurant style Peking duck, the chef normally slices the duck for us so we have it without the bone. Bones are used to make soup to go with the dish. Ahhhh I love peking duck so much. Thank you for sharing a considerably easier way to make this at home!
