I like that tip about moving the pot to push the foam to the side. Great video, too. I like that this and other food tube videos demonstrate a concept rather than a strict recipe. It teaches fundamentals so people can really understand and expand upon the technique rather than just being able to follow directions. You're doing a service to the global community.

After 30 years living in France I just used yesterday for my Christmas Day meal for the 1st time this incredibly delicious gravy ! OMG we all loved it made such a difference. I’ve only just started watching Jamie’s videos which always brings a smile to my face. This Gravy is hands down the best gravy ive ever had. I didnt add stock, just water instead and its still so flavorful

I use ground almonds instead of flour as a thickener.
Adds a bit more flavour and you wont get the glooping or the powdery taste of flour if you add too much of it.

Ground pecans also a treat.

I've always been intimidated with the gravy and get really stressed. I followed the basics of this gravy method and it was the easiest & best gravy I ever made! The trivet of veggies was amazing advice!

Additional tip: right before serving, melt a nice piece of butter in it, to make your gravy silky and shiny !

Wonderful video! Similarly, I roast my turkey on a layer of peeled, halved onions, chunked carrots and some celery too, with various herbs and such. The bacon I put on top of the turkey - removing it for the final browning of the birdie. The thing I do that we enjoy, is after roasting and removing the turkey from the pan I carefully separate out the onion halves and carrot pieces (that were deliciously cooked in those turkey juices) and save them to arrange around the roasted turkey. Sometimes I brown them up a bit more under the broiler first. It makes a nice presentation, and they taste so very good! Many thanks for your program from an old Mom in Canada :-)

I did this recipe last year plus the Turkey for the first time. OMG MY FAMILY LOVES it was my firat home made turkey for christmas. I cant wait to do again this year

We stuff our turkey w/onion, carrots, celery tops and rosemary sprigs. The cooking juices marinade that and drip into the same pan while the turkey is cooking. We simmer the neck & gizzards on the stovetop a long time w/mirapoix then add the strained liquid to the strained, degreased pan drippings. Same flavors. Tomato paste, S&P, spices like poultry seasoning and rosemary /thyme - but nothing like wine, Worcestershire etc.
