I've always been against the mistreatment of animals but thought Vegan food would be to time consuming, expensive, not enjoyable. But these look so good I'm going to give a vegan diet a try.

I make a chilled couscous salad. It has Kalamata olives, bits of yellow bell paper, grilled zucchini and tomato. I dress it with a Greek style (vegan) dressing with lots of oregano and lemon. When I take it to potlucks I never bring any home.

For the Edamame garlic butter pasta, I'd use miso paste and lots of toasted sesame seeds too.

Peanuts instead of beans might also work for protein in the veggie udon noodles (for those who can't eat beans). What do you think? It could add some crunch! 🍲

okay i just made the burgers and I've been missing out for so long!!! I'm a diehard Jack Monroe fan and have been making the 9p burger for years but this...might replace it. The few extra cents is WORTH IT these burger patties are SO GOOD. Please everyone make them. So easy and cheap you really have no excuse. Thank u.
