I had these at the QCH in London recently and can confirm they are most excellent (as pretty much everything else at that restaurant). I will definitely attempt to make these myself 😋

last time i used a mandolin i sliced the tip of my thumb off, any advice on avoiding that?

I would use a higher heat oil than olive oil. But looks great

Can’t find the answer to this on any YT video… do I have to wash the starch off off the potatoes after slicing them? Cheers

Happy to start of in duck fat. Would do the final fry in duck fat too though, why ruin it's excellent taste with olive oil?

I had something like that in a Michelin star pub in the UK. They tasted nice but it was all SO FATTY. I wasn’t feeling too mobile after a fairly normal sized meal.
