Just to correct, Mojang doesn't use Bare Bones itself rather Bare Bones (originally) was based on the Trailer textures and is now keeping the style but being just textures however the creator feels like making them. In the trailers, the textures you see are probably done with some shader or editing as they're heavily inconsistent and are never the exact same (probably what caused that helmet and the blue redstone to happen in the first place)

I think it might be a hint at an update for helmet textures but it could also be cobble armor. I actually spoke with my friend about this before this video released and that's what we came to

My guess would be Quartz Armor, since it's white and it having this aesthetic would simultaneously pair it with Netherite Armor for a Nether Armor aesthetic and differentiate it from Iron Armor.

Actually, this item has existed in Lego for quite a while. In the second dungeons set (the one based on the jungle DLC), one of the players is wearing a netherite helmet mold in the iron armor color.

Not only the helmet but also the boots bellow have the netherite shape. It's definitely just a lighting thing and the armor is simply netherite.

Perhaps their texture pack also makes it lighter to show it better.
