Welcome Friends, welcome back to the kitchen! Today, I’m making what I’m calling Marry My Tuscan Cowboy Chicken—a mashup of Marry Me Chicken, Tuscan Chicken, and Cowboy Chicken. No matter what you call it, this creamy, tomato-infused, herb-packed one pan chicken recipe dish is pure comfort food and perfect for a quick weeknight meal.
I’m using chicken breasts, but this would be amazing with chicken thighs, turkey breast, or even pork chops. The sauce is made with garlic, shallots, mushrooms, sun-dried tomatoes, hot peppers, white wine, and 35% cream—all simmered down to a rich, flavourful finish. Serve it over mashed potatoes, rice, or pasta, and don’t forget some bread to sop up that incredible sauce!
Marry My Tuscan Cowboy Chicken Recipe
Ingredients:
4 chicken breast (skinless / boneless)
Salt & pepper to taste
oil for sauté
1 shallot, finely chopped
Handful mushrooms, chopped
250g cherry tomatoes, halved
2 mL (½ tsp) red pepper flakes
5 mL (1 tsp) dried oregano
5 mL (1 tsp) dried thyme
4 cloves of garlic, minced
125 mL (½ cup) sundried tomatoes, chopped
250 mL (1 cup) dry white wine
125 mL (½ cup) 35% cream
Method:
Season chicken with salt and pepper.
Preheat oil in a heavy pan over medium heat.
Sauté the chicken until lightly browned and they are cooked ¾ of the way through.
Transfer the chicken to a plate.
To the same pan add shallot, mushrooms, tomatoes, oregano, thyme, and red pepper flakes; cook until the shallot starts to soften.
Add garlic and sun-dried tomatoes to the pan.
Pour the white wine into the pan and cook, scraping up any fond from the bottom of the pan.
Reduce the heat to medium-low and stir the cream into the mixture.
Simmer until the sauce begins to thicken.
Return the chicken to the pan and simmer in the sauce until the chicken is fully cooked.
**Mystery ingredient was: Peperoncici Piccanti (Chopped hot chili peppers in oil)
