Veganuary 2/25 🌱
Curry noodles 🍜

All you have to do is chop, dump in a pan and bake! 😎🔥
RECIPE (2 servings, 25min prep time):
-2 carrots
-a handful sugar snap peas
-200g firm tofu
Chop everything.
-200ml full fat coconut milk
-200ml water
-1 1/2 Tbsp red curry paste
-1 Tbsp soy sauce
-juice of 1/2 lime
-a pinch of sugar
-salt to taste
Mix well.
-2 servings of udon noodles
Add everything to the baking dish and bake at 200C/400F for 20mins.
Mix well and serve with cilantro and peanuts.

Alles, was Du machen musst, ist schnippeln, in eine Form geben und backen! 😎🔥
REZEPT (2 Portionen, 25 Minuten Zubereitungszeit):
-2 Karotten
-eine Handvoll Zuckerschoten
-200g Tofu
Alles hacken.
-200 ml Vollfett-Kokosmilch
-200 ml Wasser
-1 1/2 EL rote Currypaste
-1 EL Sojasauce
-Saft von 1/2 Limette
-eine Prise Zucker
-Salz nach Geschmack
Gut mischen.
-2 Portionen Udon-Nudeln
Alles in die Auflaufform geben und 20 Minuten bei 200 °C/400 °F backen.
Gut vermischen und mit Koriander und Erdnüssen servieren.

Made this the other day. Came out pretty good! Not sure I will keep buying udon noodles, but I will try that sauce recipe with tofu over rice in the future. Thanks for a tasty dinner! (And leftovers for lunch too!)

Well I know what I’m making this weekend. I wonder how soft the carrots get in that time. I have texture issues so have a hard time with raw/still crunchy veg.
