Thanks for the tips Jason. I've got to try some of your rub. It's got a good balanced look. Like what you said about not over powering the taste of the meat. I was making a recipe off the net, but got tired of it and it had too much over powering ingredients, so I fell back to SPG and have like that pretty good. Also, I ruin so many good lookin ribs attempting to cut them for the taste test. I need a nice slicing knife. Any you recommend?

Great advice. Do several cooks and master it before inviting somebody over. Things always seem to cook slower when people show up.

I have hears there are some flat rate packages that can hold up to a certain weight, but am not sure about costs and such :)
