BRUSCHETTA - Easy Italian Appetizer

In this video I’ll show you how to make a classic Italian appetizer, Bruschetta. Toasted Italian bread topped with ripw tomatoes, garlic, fresh basil, onion and extra virgin olive oil. Garnished parmigiano reggiano cheese and fresh basil and you have a delicious appetizer or a side alongside your favorite pasta dish.

French or Italian bread
3 Roma tomatoes (seeded)
1 ½ tbls finely chopped red onion
1 large finely chopped garlic clove plus one whole garlic clove
1 bunch of fresh basil leaves
1 tsp. dried oregano
2-3 tbls. Extra virgin olive oil
Kosher salt and ground black pepper to taste
Grated parmigiano reggiano cheese
½ tsp. roughly chopped fresh basil

Preheat oven broiler to high.
Cut bread on the bias about an inch thick
Chop tomatoes into chunks size pieces, cutting out the seeds.
Finely chop the red onion and garlic.
Finely chop fresh basil leaves.
In a bowl, add the tomatoes, onion, garlic, chopped basil, oregano and olive oil. Salt and pepper to taste. Mix well.
Brush the top of the bread with olive oil and place under the oven broiler for about 1 minute until lightly toasted.
Remove the bread from the oven, rub with the reserved garlic clove then top with the the tomato mixture.
Sprinkle parmigian reggiano on top and serve.

Richard, that is good stuff, sometimes I put thin sliced cold smoked salmon on it for a meal, very nice
