Aussie Pie Recipe | Homemade Australian Meat Pies

Today is ANZAC Day 2023. Last year I made ANZAC Biscuits, this year I'm making Aussie Pies. Here are the links to short crust pastry and puff pastry below as well all as cooking directions and ingredients.

Pie Meat
Ingredients:
⦁ 1 Pound or 500g minced (ground) beef (80% Meat - 20% Fat or 83% Meat - 17% Fat)
⦁ 2 medium brown onions, peeled and chopped roughly
⦁ 1 heaped tsp of minced garlic or 1 clove finely chopped
⦁ 2 cups boiling water
⦁ 3 beef stock cubes
⦁ 1 tbsp. Vegemite
⦁ 3 or 4 tablespoons of corn flour with 1/2 cup hot water
⦁ Few drops of Worcestershire sauce
Seasoning Blend:
⦁ ¼ tsp nutmeg
⦁ ¼ tsp thyme
⦁ 1 Tsp Salt and Black Pepper

Cooking Method:
First make the beef stock by adding the stock cubes into a small bowl with boiling water and then stir until dissolved and place to the side for later.
Peel and Chop the Onions into small pieces on a cutting board.
Add a decent amount of Olive Oil into a large frying pan and put onions into the pan and place a small amount of salt on top of the chopped onions to sweat out liquid and sauté the onions on high heat until translucent.
Remove the onions from pan and pour them into a separate bowl and leave off to the side.
Using the same pan with the onion residue, add the minced beef into the pan and sprinkle a bit off salt on top to sweat out the fat.
Cook on a high heat until very brown.
Add the garlic to the edge of the pan to start cooking for a few minutes.
Turn the meat over and once its browned a little start to break it up into 4 square shaped patties and then chop into small bits with metal spatula on a medium heat.
Add back the onions then stir, then add the seasoning blend and stir.
Add in the beef stock and a few drops of Worcestershire sauce and then a heaped tablespoon of Vegemite.
Simmer, partially covered, on low for about an hour stirring occasionally.
In a small bowl or measuring cup, add 1/2 cup of cool water and four heaped teaspoons of corn flour and mix well.
Slow pour the slurry into the meat and stir in quickly until fully incorporated.
Simmer stirring constantly for a minute or so…
Taste again and adjust seasoning if need be.
Allow meat mixture to cool down.

Filling Directions
Take a sheet of short crust pastry (if using homemade pastry then roll out and flatten into a sheet about 12X12) and lay pie dish upside down on the dough and trim around the top of the dish in a circle leaving a small margin of dough exposed. Remove the cut out dough and place it inside the pie dish and press down and form it all the way the dish including the edges. This recipe should be enough for 5 to 7 pies. Fill the pie crust about 80% of the way in the shells. Take a small cup with an inch of water and crack and place an egg inside and stir vigorously with a fork and set the side. Preheat oven to 190c (375f). Place a cookie sheet in the oven while it preheats. Brush the edges of the crusts with the egg wash. Take a sheet of puff pastry and trim around the pie dishes perimeter and place on top of the edges of each pie. Crimp and press the the doughs together, locking in the crust and make sure no excess air is inside. Go around the edges of the crust with a fork to firmly lock the crust and take a sharp knife and poke a hole in the top of the pie to vent when cooking. Once finished sealing and poking all the pies, brush the tops with the remaining egg wash.

Cooking Method
Remove hot sheet (carefully) from the oven and place pies on it. Place pies in the oven on the center rack and cook for at least an hour. Once an hour has passed, remove pies from the oven, turn off the oven and leave the pies on the cookie sheet on top of the stove for at least 15-20 minutes to carry over cook and finish cooking the bottom of the crust. Afterwards, gently remove pie from the dish and place on a plate and allow to cool for bit as the inside is still hot.

Enjoy with Tomato Sauce and NO KNIFE AND FORK! Cheers!

My local bakery in Ferny hills Brisbane is an award winning bakery and have such pies as corned beef and white sauce and even a cheeseburger pie (mustard and pickles in it) I’ve had thousands and every bakery has their own recipes, love your vids to mate gud onya is 😊

Mate great job. I'm 50yrs old and have eaten thousands of pies. The variety and creativity of bakers in Australia is endless. All pies are different and I eaten many that were rubbish but I have NEVER made a meat pie. You did an awesome job!

That's a different way of cooking the mince! I've never seen that before, and I was a chef for 30 years. I guess it's whatever works for you. Thankfully puff is cheap here, so I wouldn't go to the bother of making it. Now you can play with your pie fillings. That was definitely a beef and onion pie, or would be if the onions were a bit chunkier. We generally use smaller onions. There's beef and mushroom, beef and tomato, beef with bacon and egg, beef and cheese was always my kids favourite. There's curry and rice, cottage pie with mashed potatoes, or any combination you like. You can use chicken, and there's lots of those too. My go to is chicken and leek. Your food journey has just begun! You're right though, they're a sometimes food. Not for every day. Enjoy.

- Bloody great job there & you got the right 'dead horse' too. None of that Ketchup crap as it's too thick. The variations are tremendous across Oz. Some old bakeries in the bush still use wood fired oven to bake their pies but this was a a Huge effort Reciting The Ode was a wonderful show of respect on ANZAC Day. As a poor uni student who worked full-time & went to night classes 5 nights a week - a pie was was my dinner as I travelled on the train in winter to the campus. I ate every variety they made & working in an office I had an hour trip after work - so different pies were my cuisine.

Wow you went all out sweety … I have a pie maybe ever three months . M6 dad used to call them a dead eye, no idea why lol . My mums recipe was very close to that accept she added a squirt of fountains tomato sauce lol . Well done sweety what a lovely nod to Anzac Day. you are lovely 🥰 xox

I am a tradesman (construction worker) in Australia. I usually use a smoker/woodfired grill to cook for the family on weekends. Leftover meat (if there is any) goes great in pies for smoko during the week.

Mikey always, always use a wooden spoon to break up your mince. Also the garlic should be finally chopped and added to the already browned meat, otherwise it will burn. It’s great you’re having a crack though.
