Pro tip- put the butter on after, the sous vide liquifies the butter and it actually dilutes the flavor of the beef. Put the steak in there with just the rosemary and sear it and butter it after 👌

Go buy an eye of round or similar cheap whole roast, portion it out, freeze in ziploc bags. To prep thaw overnight in fridge, then 30 mins before cooking slice it thin and soak in baking soda and a little bit of water. After 15 mins drain, pat dry, marinate with your choice of seasoning for another 15 mins. Sear on maximum heat (half cook it), set aside, stir fry whatever vegetables you want, put the meat back in, toss to combine and finish cooking the beef. Chinese restaurants have done this with cheap cuts for well over a hundred years at this point.

If you are a fan of Guga, then you know NOT to add butter or oil to your sous vide. The butter absorbs all the flavor/aroma.

Do not use butter at the sous vide stage, instead do it after. NY strip at 137 is a bit too much. We usually reserve 137 for fattier cuts such as Ribeye

I noticed they upped the price on this kinda stuff. The ribeye roasts use to be cheaper than ribeye steaks per lb. Last I looked it was MORE expensive! Likely due to these types of videos.

Cooking a quality cut longer in a sous vide bath doesnt make it more tender. This cut is already tender. Those will be cooked in 45 min to an hour. It's still a good meal prep plan though. Dunno if i would call it a hack.

Ny strip is not a cheap cut.
Grill it, salt, pepper,garlic medium-rare, it will taste better.

I have a vacuum sealer and a sous vide cooker. It’s an amazing way to to make a steak, but won’t save you time. You still have to sear the steaks after they are cooked.

If you happen to live in Texas, keep eyes on the HEB weekly ads.

Every 6 weeks or so they’ll have select ribeye go on sale.

Go to the meat counter and as to buy the whole roast. I usually get two of them and it’s never been more than $150 total.

Got two chest freezers full of ribeye steaks and prime rib roasts that I cut up myself.
