Hey all, quick video about how to breakdown the salmon from Costco.

I'm probably underestimating here, but this 3lb fillet made 7 saku blocks

Some notes about salmon:

farmed salmon are fed pellets so there's virtually no parasite risk. However I still like to freeze mine for 7 days

The curing CAN be skipped, but the 30 min of salt and 2 min of rice vinegar eliminates the fishiness. A must for sensitive eaters

I've also eaten this fillet as is after cleaning, works great with chogochujang

Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness

Do you freeze prior to the cure, after, or both? I’m typically sensitive to salmon so I’m happy you introduced the salt and vinegar cure to your process steps for us. I figure most omakase restaurants do the same because I typically can only tolerate salmon from places like these.

Gone are the days of my youth ordering only salmon sashimi from AYCE as well as lox on my bagels lol

I absolutely love salmon because even mid grocery store salmon is good. But I'm sorry I just do not trust like that anything coming from a big name grocery store gets cooked to temp here lol
